  • Sencha for Cold Brew (Japanese Green Tea) - 160g Out of Stock

    In Japan, often in summer, tea is enjoyed in the form of “Mizudashi Sencha”, or “Cold Brew Sencha”. When brewed with cold water, the result is a drink with an extremely strong umami taste with lesser caffeine and catechin. The reason for this is because the tea leaves’ amino acids are more easily extracted, while catechin, which is responsible for biterness, is not. This makes the drink not only tasty but beneficial for your health by improving your immunity!

    You can also enjoy sencha as a hot drink. Each purchase comes in a resealable pack.

    How to enjoy this product as a hot drink:

    First Brew – Sencha
    1. Fill your teapot with two teaspoons (5g) of sencha
    2. Pour boiling water into a cooling cup. You may use your teacup to cool the water. When the water is approximately 60°C to 65°C , gently pour 60ml into your teapot.
    3. Wait for the tea to steep for 1 min.
    4. With a tea strainer placed over your teacup, pour the brewed tea in. Ensure the tea is poured till the last drop.
    5. When finished, gently tap the teapot to evenly disperse the tea leaves. This allows the leaves to cool in preparation for the next brew.

    Second Brew – Sencha
    1. You will require 70ml of water at 80°C. Once the water is ready, pour it into the teapot.
    2. You do not have to wait for the tea to steep. Pour the brewed tea immediately into your teacup. Gently tap the teapot to evenly disperse the tea leaves.

    Third Brew – Sencha
    1. Bring a fresh pot of water to boil.
    2. Once the water has boiled, immediately pour 70ml into your teapot. You do not have to wait for the tea to steep. Pour the brewed tea immediately into your teacup.

    How to enjoy this product as a cold drink:

    1. Place approximately 15g of tea leaves into an infuser.
    2. Add 1L / one litre of soft water.
    3. Let the brew steep overnight, preferably in the refrigerator, for approximately 12 hours.
    4. Before drinking, shake or stir the tea leaves up a bit to release more flavour and colour. You can also add ice if desired. Enjoy!

    Ceremonial grade Japanese Matcha powder from d:matcha’s farm in Wazuka, Kyoto, Japan. It has a naturally sweet flavor similar to milk with a bright and refreshing taste. The fragrant scent of the cultivar also makes it easy to drink. In Japanese, it’s name is loosely translated to “late green” in reference to it’s deep and beautiful jade green colour.

    This premium pesticide-free matcha has a lighter taste both in umami and in bitterness, and its aroma is refreshing like a sencha. Due to its milder taste which contains all the health benefits of matcha, this variety is growing in popularity and is commonly used in tea ceremonies. Recommended for wagashi (traditional Japanese confectionery) or for no-bake desserts giving you with the opportunity to fully taste the quality and intricacies of this cultivar.

    1. Heat a chawan (tea bowl) with hot water.
    2. Soften a chasen (bamboo whisk) by lowering the bristles into the hot water.
    3. Empty the water from the chawan, and dry the bowl thoroughly with a soft cloth.
    4. Sift 1 teaspoon of matcha into the chawan, and whisk together with 60-70 ml of 75-85°C filtered water.
    5. Use a M or W motion with your wrist, avoiding scraping the bottom and sides of the chawan.
    6. Once frothy, gently lift the chasen from the centre of your chawan.
    7. Enjoy your fresh bowl of matcha!

    Yabukita variety is a ceremonial-grade Japanese matcha powder from d:matcha’s farm in Wazuka, Kyoto. Known for its well-balanced and clean flavour profile, yabukita is the most widely cultivated tea variety in Japan, accounting for approximately 75% of the country’s tea plantations.

    Harvested in spring (known as the first harvest of the year) from their Ninose tea field located in Yubune, Wazuka Town, this field is known for its distinct taste and colour. These qualities are heavily attributed to the sandy properties of the field, a rarity in Wazuka, well known for its mountainous characteristics. All these distinct features come together, producing extremely ideal conditions for tea worthy to be used at a culinary level. The quality of this matcha however, is in actual fact that of a ceremonial grade. This means you can also enjoy it purely as a drink. Best recommended for all your baking needs!
