The El Palto cooperative started in 2003 with 35 small farms and now has 189 members with a total farm area of 549 hectares. Located in the Andean region of northern Peru, coffees with fruity cup profiles and notes of citrus and orange can be found. Their mission is to help farmers strive to produce high quality beans that are certified organic and Fair Trade. They are also a member of the Japan Foods Association.The coffee is decaffeinated by the Canadian company, Swiss Water. Water decaffeination is non-chemical and uses only pure water. This method best preserves the coffee’s natural oils and flavours with none of the chemical residue from the more traditional decaf process.
