Rigoberto Herrera and his family own five farms and produce some of the world’s most beautiful coffees. This Yellow Bourbon lot from Las Margaritas was processed using the “hybrid washed” technique developed by the team at CGLE. This processing method helps keep a balance between reinforcing the fruit characteristics while maintaining the crisp sweetness and clarity of washed coffees. Coffee cherries were manually picked and rigorously sorted, then sensorially tested in order to decide the optional fermentation, based on the cup profile desired. As a result, the coffee was fermented for around 20-22 hours in whole cherry form. The skins were then removed to begin a second fermentation, which took 35 hours. Temperature was regulated carefully and was maintained between 35-45°C, with a final water content of 10.5%.

This cup yields a wide range of stone fruit notes, like yellow peaches, white nectarines, and apricots, with malt notes and a citrus-like aftertaste which reminds us of grapefruit.
